Growth Habit: Upright, clustered basal rosette. Forms a tight, spoon-shaped bundle with pale, fleshy stalks and rounded, smooth leaves.

How to Plant & Grow:

Site Preparation: Bok Choy thrives in loose, rich, and well-drained soil. Before planting, work plenty of aged compost or well-rotted manure into the top 6 inches of your garden bed to ensure the stalks stay tender and sweet.
Sowing: Direct sow seeds outdoors as soon as the soil can be worked in early spring. Plant seeds ¼ inch (0.6 cm) deep and cover lightly with fine soil. Keep the soil consistently moist but not waterlogged.

Spacing:

For Continuous Baby Leaf Harvest: Sow densely at 1 inch (2.5 cm) apart in rows spaced 6 inches (15 cm) apart. Snip whole young plants for salads
For Full-Sized/Premium Stalks: Thin seedlings to 6 inches (15 cm) apart, in rows spaced 12 inches (30 cm) apart.
Square Foot Gardening: Plant 4 seeds per 1-square-foot area, thinning down to 2 strong plants per square foot for fully mature, thick-stemmed heads.
Watering: Consistent and even moisture is non-negotiable for Bok Choy. Aim for 1 inch of water per week. Fluctuating soil moisture will cause the stalks to become tough and fibrous.
Harvesting:
Baby Stage: When plants reach 4–6 inches, use a knife to cut the entire plant at the soil line. It usually does not regrow effectively, so harvest the whole plant.

Mature Stage: Wait until the stems plump up like the ones in your photos (around 8-10 inches). Cut the whole rosette at the base.
Gardener's Tip: Bok Choy is a cool-season crop. It will "bolt" (flower) and turn bitter during the intense summer heat. For the best results, plan for a spring planting and a second fall planting in late August.
