How to Plant & Grow:

Spacing:
- For Baby Leaf Harvest (cutting early): Sow seeds 1 inch (2.5 cm) apart in rows spaced 6 inches (15 cm) apart.
- For Full-Sized Leaves (mature plants): Thin seedlings to 6 inches (15 cm) apart, in rows spaced 12 inches (30 cm) apart.
- Square Foot Density: Plant approximately 12 to 16 seeds per 1-square-foot area for a dense patch that you can continuously snip.
- Watering: Keep the soil consistently moist (about 1 inch of water per week). Dry soil will quickly cause Arugula to become bitter and bolt (produce flowers).
- Harvesting: When leaves reach 3-4 inches long, use clean scissors to snip the outer leaves about 1 inch above the base. The inner core will regrow for another meal.
- Bolting Tip: Arugula loves cool weather. If temperatures consistently exceed 75°F, it will bolt. Stop harvesting bitter leaves once it flowers. Instead, plant a Fall crop in late summer for the sweetest, most delicious leaves!
