How to Plant & Grow:

• Site Preparation: Choose a location with full sun to partial shade. New Zealand Spinach prefers loose, fertile, well-draining soil rich in organic matter. Work 3 inches of aged compost into the top 6 inches of the soil.
  
• Sowing (Crucial Tip for Germination): This variety has a notoriously tough seed coat! For best germination, soak the seeds in warm water for 24 hours before planting. Direct sow seeds outdoors in spring after all danger of frost has passed. Plant seeds ½ to 1 inch (1.2-2.5 cm) deep and cover lightly. Keep the soil consistently moist until germination (10-21 days).

Spacing:

• For Spreading Plants: Thin seedlings to 18 to 24 inches (45-60 cm) apart in rows spaced 24 to 36 inches (60-90 cm) apart. They need plenty of room to spread.
  
• Square Foot Gardening (SFG): Plant 1 plant per 2-square-foot area.
  
• Watering: Keep the soil consistently moist, especially during dry spells. Provide about 1 to 1.5 inches of water per week. Consistent moisture ensures tender, non-tough leaves.
• Harvesting: Harvest the young, tender shoot tips and leaves (the first 3-4 inches of the vine tips) once the plants are established. Pinch off the tips with your fingers or snip with scissors. This will encourage the plant to branch out and become even more productive. Do not let the plant flower (as seen in our first photo) for too long, as this signals the end of leaf production.
  
• Gardener's Tip: 

  The plant will grow back after pruning! Don't be afraid to harvest the tips aggressively. The more you pinch them off, the more side shoots the plant will produce, giving you an abundant supply all summer.
