Growth Habit: Upright, large leafy plant. Produces a massive, fractally spiraled central cone of lime-green florets, followed by multiple smaller side shoots after the main harvest.
Soil Preference: Deep, loose, fertile, moisture-retentive loam heavily amended with organic compost. pH 6.0 – 7.5.
Temperature Preference: Strictly cool weather. Best performance at 50°F - 65°F (10°C - 18°C). Will fail to form heads if temperatures consistently exceed 80°F.

How to Plant & Grow:

Site Preparation: Romanesco is a heavy feeder that requires rich, deep, and well-draining soil. Work 3–4 inches of aged compost or well-rotted manure into the top 8 inches of your garden bed before planting to support vigorous, high-quality growth.
Sowing: Direct sow seeds outdoors in early spring (4-6 weeks before the last frost) or, preferably, in midsummer for a fall harvest. Plant seeds ½ inch (1.2 cm) deep and cover lightly. Keep the soil consistently moist until germination (5-10 days).

Spacing:

For Large Central Heads: Space seedlings 18 to 24 inches (45-60 cm) apart in rows spaced 24 to 36 inches (60-90 cm) apart. They need abundant space to reach their full, architectural size.
Square Foot Gardening: Plant 1 plant per 1-square-foot area. Do not overcrowd.
Watering: Consistent, deep watering is critical for producing tight heads. Provide about 1 to 1.5 inches (2.5-4 cm) of water per week. Fluctuating soil moisture can lead to loose, poorly formed heads.
Harvesting: Main Crown: Harvest when the central cone is tight, solid, and has reached a vibrant lime-green color (usually 5-8 inches in diameter).
Use a sharp knife to cut the thick stalk 3-4 inches below the head. Leave the lower leaves intact.
Side Shoots: After cutting the main head, new smaller cones will sprout from the leaf nodes. Continue to harvest these smaller shoots for weeks!
Gardener's Tip: Fall planting is highly recommended! Romanesco is very sensitive to heat; hot summer temperatures above 80°F will cause it to "bolt" (flower) and fail to form a head. For the best success in the US, sow seeds in late July to mid-August for an incredible October/November harvest.
