How to Plant & Grow:

Site Preparation: Select a spot with full sun to light afternoon shade. Bok Choy requires rich, loose, well-draining soil with high organic matter. Work in 3 inches of aged compost or manure into the top 6 inches of soil before planting to keep the stalks succulent.
Sowing: Direct sow seeds outdoors in early spring, as soon as the soil can be worked. Plant seeds ¼ inch (0.6 cm) deep and cover with fine soil. Keep the soil consistently moist.

Spacing:

For Dense "Baby Leaf" Harvest: Sow seeds 1 inch (2.5 cm) apart in rows spaced 6 inches (15 cm) apart. Harvest young without thinning.
For Full-Sized Plants (Standard): Thin seedlings to 6 inches (15 cm) apart in rows spaced 12 inches (30 cm) apart.
Square Foot Gardening (SFG): Plant approximately 4 to 6 seeds per 1-square-foot area, then thin down to the strongest 2 plants per square foot for fully mature heads.
Watering: Consistent, even moisture is crucial for Bok Choy. Give them at least 1 inch of water per week. Fluctuating soil moisture will cause the stalks to become tough and fibrous.
Harvesting: Baby stage: When plants are 4-6 inches tall, use scissors to snip the entire plant about 1 inch above the soil line. It will rarely regrow well, so harvest the whole plant.
Mature stage: Harvest when stalks are thick and glossy (as shown in your 3rd picture), cutting the whole rosette off at the base.
Growing Tip: Bok Choy is a cool-weather lover. It will quickly "bolt" (go to seed) and become bitter in hot summer weather. Plan your planting for early spring and late summer for a fall crop.
