El sabor del hinojo se desarrolla y se intensifica a medida que las plantas maduran. Las plantas muy jóvenes (etapa de hojas tiernas) tendrán un sabor suave a hinojo, mientras que las plantas maduras (de 20 a 30 cm de alto) tendrán un sabor más intenso.

Flores comestibles: Los floretes se utilizan para adornar platos salados y combinan bien con platos de pescado, papas, tomates y carne de res. El sabor es a anís dulce.

🌿COSECHA: Las hojas y los tallos se deben cosechar para su uso fresco antes de que la planta comience a florecer. Las raíces se pueden cosechar en el otoño del primer año antes de que la planta florezca. Por lo general, el hinojo debe permanecer invernando para que produzca semillas. Se espigará y producirá semillas el segundo verano en áreas donde se cultiva como planta bienal o perenne. Las plantas pueden producir semillas el primer año en áreas con una primavera larga y fresca. Coseche las semillas cuando comiencen a adquirir su característico color verde grisáceo.
